Does anyone know if using the priest class-specific power (You are now able to destroy minor/major undead) consumes piety?

Also I read in the guidebook that 'u'sing the holy symbol gives a small increase in piety like +0.5 points or something...can someone confirm that?

I can confirm that using a holy symbol to pray does grant you some piety. It stops working at a certain point, as your piety decreases per turn at the same rate that you gain it.

Not a very high point. Nowhere near enough to get crowned/precrowned. The holy symbol is mostly useful for getting a little bit of extra piety in the early game to make sure you always have a prayer on your side.

As for the priest class powers, yeah they do use up a bit of piety. Not sure how much though.

At 11k piety, you lose 110 piety every 220 turns.
You can get, at best, 110 piety every 220 turns with a holy symbol.

Crown/pre-crown costs 30k, doom removal 10k, curse removal 3k, turn undead 200, etc...
There is also a multiplier applied for each time you pray for something which is multiplied to the base costs and increases each time you pray for something.
