Turn Undead means "use your piety to sacre off the weaker undead". A pessimist sees a dark tunnel. An optimist sees a light at the end of that tunnel. A realist sees a train. And the train driver sees three idiots on the tracks. |

If I should hasard a guess I would say it's called "turning" because it makes undead flee from you... Although a high level priest can also outright destroy lesser undead withing his LOS with the turning ability (nice way to clean up after a over-zelous necromancer for example).
