How do you kill/survive them?
All my characters seem to run into one that kills them eventually.

Well, obviously you should attack them at a distance. Archers have usually no problems with them. Wizards and the like should be able to blast them with some deadly magic (use ice against fire and vice versa). Melee chars ought to have enough hp to survive them, and barbarians could try to whack them while (true) berserk and use mighty blow.

A good tactic is not to run around with low hp. After a tough fight, heal your wounds before continuing your wandering around.

This one might be a bit spoily, so:

Have you noticed that on a level with a vortex/vortices, you get the message "you hear a distant wind"? If you get this message, you ought to heal yourself or perhaps retreat to an earlier level to heal. If you get many of them during a single turn, be afraid, as there is probably a room full of them on the level.
They're the biggest threat to low level chars, and low level chars can usually die to just about anything, so I don't consider them any more dangerous as other low-level killers, like snake pits. Though if you decide to descend the UD as the first thing you do and encounter a "threaten" room full of them, you're pretty screwed.
If you're feeling happy, don't worry, it'll go away.

If you are a melee character, then you should wait for them to come to you. Make sure you have more speed then they do, switch to Berserker tactics, and hit them hard.
A good idea is to drop all your stuff on the ground, and lead them away, but it's risky.
Barbarians have it easy (Treamendous blow+true berserker), and other classes should rather use missiles or spells.

but did you all know that they are susceptible to constuct slaying ammo?

Also, wand of webbing works great on Cat Lord (off topic, I know)

Yes, they are constructs, but I haven't had any chance to check construct slaying ammo (by the time I have enough of those to waste them on simple "V" instead of golems, I'm strong enough to kill them with one blow).
