I've heard mention of this here and there....how does one get a shop to restock, exactly? The only thing I've tried thusfar was with the shop in Dwarftown...the GB mentioned putting all of the items in the shop into a corner, but that didn't seem to work.

Restocking of shop consists of following:

You collect everything and put it in to corner. You buy everything interesting. You wait till the shopkeeper summons more stuff. You pick up everything, scan it and buy everything good. Drop everything in to same corner. If the shopkeeper doesn't seem to restock the shop, buy everything, including crap. Then wait till the shopkeeper refills the shop. This requires quite lot money though.

I consider only potion/ring and maybe book/scroll shops worth restocking.

Figurine shops are totally useless IMO, since I don't use companions.
The rust monster touches your blessed Trident of the Red Rooster. Nothing happens. You laugh at the monster's pitiful attempt.

I have never seen the the shop in dwarf town restock, but I've had no problems with other shops.

Certainly the easiest is the casino since the 'keeper seems to restock about a third of the area without buying anything during which time you can gamble away.

Waldenbrook restocked some time after I put everything on the top left corner, but he only put one item on each space along the left wall.

The only time I saw a shop restock was when the kasino (80x50 screen). I put stuff on one space (circa 12 trips due to burden), play the casino, got stunned for 2 hours and see half of the kasino fulled again.

New stuff is randomly generated.

e.g. recently the hole in the wall shop restocked with a pair of seven leagu boots. I hadn't even bought anything from the place.

The area of a shop is already specified upon creating, which is the area full of items. Likely that some monster dropped the boots, drin#.

If a monster drops an item in the shop it's yours, it doesn't become the shop's item.

I moved all items to one corner. Left the village. Returned. "You hear arcane mumbling". 7LB in shop. I most certainly had to pay for them.

I'm confused by the first sentence of your post and it's relevance but I can assure you that I payed the 7000ish gp for those boots.

Well aware of monster drops not belonging to the shop.

for the figurine shops, buy them, bless them, then break <kick> them, sometimes you get wands..
% is in the guidebook, i forget.

Shops restock based on the total number of items they have for sale and the number of empty spaces in thier shop... so it's best to first pile everything up in one square, but also buy any cheap junk in addition to anything you actually want (rocks, throwing clubs, cursed vanilla weapons, etc.) to optimize the restockability. The new items created are always random (based on the type of shop, of course.) Also, I believe you're more likely to get a restock if you spend a lot of time on the same dugeon level rather than a different one.

And IIRC after restocking the prices are higher than before...
