Pretty much anyting realy, up tp and including luck and literacy, not to mention stat boosts. Eating corpses of monsters with special skills is pretty much the standard way to pick up such abiliies (aside from some guaranteed artefacts). Not gonna post a complete list of what to eat to gain what (that's what the spoiler forum is for), but it's pretty straight forward, eat a fire critter to gain fire resistance, eat strong monsters to grain strength (up to a scertain point) etc. Just be carefull not all corpses make good eating, some make you sick, a couple make you take a little dammage and I can think of at least one that will kill you outright if you don't have the right resistance first.
