Pets are gained by the Music skill, placing a musical instrument in the tool slot and 'u'sing it.

Drakelings, Bards, Mindcrafters and Priests get the Music skill.

Companions are gained by a scroll of familiar summoning.

You forgot the Necromancy skill... but wizards don't get that anyway :)

Then, of course there are "pet shops"... they sell figurines, which you can use to get a pet. Or you could find one randomly. They've got to be blessed (dipped in holy water) to work.

bones to skeletons or dogs
food to beggars

you can wish for 'friends' (but that doesn't really give anything good)

an uncursed ring of djinni summoning will give a djinni companion.

necromancy creates slaves not pets or companions.

Not really, but I did once try to kill a rust monster by throwing spears at it and it became my companion.

my dead wizard actually found a book or scroll or something of necromancy...it appeared on her skills list after i used it...she would have been perfect, since i want necromancy but i want to be a wizard...of course, she died of starvation or something stupid. ack!

In this game your character can die in much more ways than in any other game. There's even a list of possible death messages somewhere in these forums. One of my best characters killed himself by kicking the stairs.

Spoiler
DON'T kick the stairs!!! ;-)

Try killing yourself by stepping on an alter of a different alignment then you and attacking on it.

You don't have to attack when standing on black or grey altar. If a chaotic or neutral humanoid just sees you you can say goodbye to your char.

About un-aligned altarts:

Spoiler
If you make a valuable sacrifice on a non-aligned altar you can convert it to your alignment (a lawfull altar will require two convertsions (once to newtral and then to chaotic).

It's not entierly risk free though.

i'm afraid that Istaria (or Ansaria (?)) will say "Welcome believer!" and i'll become neutral!

eL, that's not very likely to happen unless you're CN already. If you are, then just lure a few villagers out of Terinyo and kill them until you're more chaotic.

Any special reason why you want to stay chaotic? I'd rather be neutral - there are lots of NPCs who don't like chaotics. For example, Jharod will not teach chaotic characters Healing.
